Veggie quinoa bowls make such an easy meal. They are easy to prep ahead, so versatile, and a fun way to pack a ton of nutrients into a meal. Mix and match your favorite veggies, grains and protein, toss in different seasonings, top with a delicious sauce and create your favorite combination. Garnish with your favorite seeds, nuts, dried fruit, green onions, or fresh herbs.
Ingredients
- 1 lb broccoli
- 2-4 cloves garlic, minced
- 4-6 radishes
- 2 large carrots
- 1 cup quinoa cooked
- 2 large handfuls of spinach
- 1 can black beans
- Salt and Pepper
Honey Dijon Dressing:
- 4 TB honey dijon mustard
- 2 tsp Ruebush honey
- 4 TB apple cider vinegar
- Juice of 2 lemons
- 4 TB water (or oil)
- salt and pepper to taste
- 1/2 tsp dill
Directions
- Preheat oven to 425. Chop the broccoli, radishes, carrots and place in large mixing bowl. Toss with olive oil, garlic, and salt, pepper. Spread in single layer on baking sheet and roast in oven for 20-25 minutes.
- While veggies are roasting, rinse 1 cup quinoa under water for 30 seconds. Bring 2 cups water to boil and add quinoa and cook uncovered on low for 15 minutes or until most of water is absorbed.
- Mix dressing ingredients in a mason jar and shake until well combined.
- Add ingredients to a bowl and top with honey dijon dressing
