Line a sheet pan with aluminum foil. Spread the Brussels sprouts, onions and garlic on the pan. Sprinkle with the salt and pepper, then drizzle with the olive oil. Toss until everything is well coated.
Spread the sprouts so they are in a single layer. Sprinkle the cut bacon over the sprouts evenly. Bake 20-25 min., until the sprouts are fork-tender and golden brown.
Taste and season with additional salt and pepper if needed.

2 shallots or small onion chopped
4 cloves garlic roughly chopped
Salt and Pepper to taste
1 T extra virgin oil
4-6 slices uncooked thick-cut bacon cut into 1/2 inch strips
