Ingredients
2slicesWhole Grain Bread
2TbspHummus
2leavesRomaine Lettuce
1/4cupMicrogreens
1/4cupRed Bell Pepperthinly sliced
1TbspShredded Carrots
4-6slicesRed Onionthinly sliced
1/4largeApplethinly sliced
4-6slicesCucumberthinly sliced
1/4largeAvocadosliced
2tspPumpkin Seeds
1/4tsp olive oil drizzle
1pinch salt
1pinchBlack Pepper
Directions
1. Spread HUMMUS evenly over bread slices.
2. Layer all ingredients, starting with ROMAINE LETTUCE on bottom; work your way down the list, stacking ingredients on top of each other, ending with the PUMPKIN SEEDS.
3. (optional, but highly recommended) Drizzle EXTRA VIRGIN OLIVE OIL over sandwich and sprinkle a little SALT and PEPPER over veggies.
