This is a great versatile one-dish meal that everyone loves. It is full of flavor and veggies. Add some chicken or other meat for additional protein.
1. Preheat oven to 375 degrees F. Combine all ingredients, except for the green onions, cilantro, and avocado in a 9x13 baking dish, cover with tin foil, and bake for 45 minutes.
2. Remove foil and bake for 15 to 20 minutes until liquid is mostly absorbed and potatoes are tender.
3. Remove from oven and let sit for 5 minutes for the remaining liquid to be absorbed. Top with green onions, cilantro and avocado. Other toppings could include cheese and sour cream (or greek yogurt is a great alternative!)
