Perfect warm, one-pot dish filled with nutritious veggies. Substitute other veggies and seasonings to easily change up the taste.
1. Heat oil in large soup pot on medium heat. Add onion, carrots, bell pepper and mushroom and saute about 5 minutes. Add garlic and herbs and saute for 1 more minute.
2. Add vegetable stock and rice. Bring to a boil then turn down heat to low and cook for 30 minutes (time depends on type of rice used. I used wild rice which takes 45 minutes so I let it simmer until rice was almost cooked.)
3. Add beans, kale and and cream, let simmer for 10-15 minutes more, or until the kale softens and wilts, and rice is cooked. Add salt and pepper to taste.
