A delicious, healthy side dish or appetizer.
Ingredients
For the Fries
4 large carrots peeled, ends cut off
4 TB olive oil
1/2 cup grated Parmesan cheese
2 TB garlic powder
1tsp fresh parsley, chopped or 2 tsp dried
1 tsp salt
1/2 tsp pepper
For the Dipping Sauce:
1/3 cup plain greek yogurt
1 TB lemon juice
1/2 tsp garlic salt
1/2 tsp pepper
1/2 tsp red pepper flakes (optional)
Directions
Preheat oven to 400°F.
Slice the top and bottom off of carrots and slice in half. Slice the halves into thirds lengthwise.
Toss carrots with ingredients for fries then spread in single layer on a baking sheet.
Bake for 15-20 minutes (depending on desired crispiness)
Mix dipping sauce ingredients in a small bowl.
Serve warm carrots with dipping sauce. Topped with Parmesan and parsley.
