Ingredients: 1 head of Butter Lettuce; 2 handfuls of mixed greens; 1 handful of arugula; 6 asparagus spears; 8 oz sugar snap peas; 6 radishes; 1 green garlic; Avocado and Herb Vinaigrette Dressing; 1 ripe avocado; 4 cloves garlic; 2 tsp red wine vinegar; 2 tsp white wine vinegar; 10 basil leaves; 1 handful of parsley; 3/4 cup olive oil

This heavenly salad combines all of your spring favorites into a dish so full of flavor, you will wish you tripled the recipe!

Ingredients

1 head of Butter Lettuce
2 handfuls of mixed greens
1 handful of arugula
6 asparagus spears
8 oz sugar snap peas
6 radishes
1 green garlic

Avocado and Herb Vinaigrette Dressing

1 ripe avocado
4 cloves garlic
2 tsp red wine vinegar
2 tsp white wine vinegar
10 basil leaves
1 handful of parsley
3/4 cup olive oil

Directions

Trim the ends of the asparagus and shave it with a veggie peeler

Thinly slice snap peas and radishes

Wash and dry lettuces, add all ingredients to a bowl and toss

Add all ingredients for the dressing to a blender of food processor and blend until smooth.

Pour dressing on salad and serve
