Ingredients
4 cups Yellow potatoes, chopped
1 tbsp olive oil
1 red bell pepper
1 orange bell pepper
1 small yellow onion
2 1/2 tsp chili powder
1 1/2 tsp garlic powder
1/4 tsp paprika
1/2 tsp sea salt & pepper
Optional: cilantro for garnish
Directions
Dice the potatoes and place them into a large pot, add water to boil.
Boil until fork-tender. Drain when done.
Heat a large skillet over medium-high heat.
Combine the chili powder, garlic powder, paprika, salt, and pepper. In a large bowl, combine potatoes with seasoning and mix well.
Once the pan is hot, add potatoes. Stirring occasionally. (About 10-12 minutes)
When potatoes get crispy and golden brown, remove them from the pan and set them aside.
Place bell pepper and onion in the pan to quickly sauté. You want to lightly sauté these so they don’t get too soft.
Combine potatoes with veggies. Top with cilantro and red pepper flakes. Enjoy!
