A family favorite full of flavor and packed with lots of healthy veggies.
Ingredients
4 bell peppers
2teaspoonsextra virgin olive oil
1poundground turkey or beef
1 medium-size onion
6 large mushrooms chopped
1 heaping handful of spinach chopped
3-4 cloves garlic
1 1/2 teaspoon basil
1 teaspoon oregano
¼teaspoonred pepper flakes
Salt and Pepper to taste
1 15oz can tomato sauce (1 cup for recipe)
1 cupcooked brown rice, cauliflower rice or quinoa
1cupshredded Mozzarella
Directions
Preheat oven to 375 degrees F. Lightly coat a 9x13-inch baking dish with nonstick spray. Slice the bell peppers in half from top to bottom. Remove the seeds and arrange cut side up in the prepared baking dish.
Cook rice according to instructions.
Heat the olive oil in a large, nonstick skillet over medium-high heat. Add the ground turkey, basil, oregano, red pepper flakes, salt and pepper, and onion. Cook until the turkey is cooked all the way through.
Add garlic and cook 2-3 minutes more. Drain off excess fat and pour in 1 cup of tomato sauce and let simmer for 1-2 minutes. Add chopped spinach and cook until spinach is wilted or 1-2 more minutes.
Remove from heat and stir in the rice and ½ cup of the Mozzarella.
Mound the filling inside of the peppers and add a small amount of water to the bottom of the pan. Cover peppers with foil and bake for 30-35 minutes. Uncover and top with remaining mozzarella. Return to oven until cheese is melted.
