This soup is so simple and versatile, you will find yourself making it over and over again. We have made it with Hickory Grove Italian Sausage and ground beef and loved it both ways. I promise it will be a hit for everyone in the house!
The Wine Sellers Wine Pick: We recommend the Folktale Pinot Noir. This bottle of wine is very light-bodied and easy to pair with several flavors. It’s full enough to hold up to the Italian sausage without ever overpowering, but matches and enhances the flavors of cheese, garlic, onion, and also the sausage.
Ingredients
- 1lb Italian Sausage
- 1 yellow onion
- 2-3 garlic cloves
- 3/4 tsp salt
- 4 c. Chicken Broth
- 4 c potato peeled and diced
- 1-2 large carrots sliced
- 3 celery stalks sliced
- 1/2 TB Basil
- 2 tsp parsley
- 1 8 oz cream cheese
- 1 1/2 c milk
- salt and pepper
Directions
- Heat a large soup pot on medium heat and add Italian Sausage, onion, 1 clove garlic minced, and salt. Cook until onions are soft and sausage is cooked through. Add chicken broth. Stir while scraping the bottom of the pot.
- While the meat and onions are cooking, cut up the carrots, potatoes and celery and add to the meat and broth. Add basil and parsley.
- Cook soup for approximately 20 minutes on a low simmer, until the vegetables are tender.
- Add in cream cheese and stir until melted. Add milk and simmer until thickened. Add salt and pepper or additional herbs to taste.
