Great flavorful breakfast that will help you use up the last of the veggies in the fridge, just before your Fresh Roots Market delivery day!
Ingredients
1 lbpotatoes, medium diced
1 lb chorizo or sausage, sliced
1/2 bell pepper, medium diced
2 cloves garlic, chopped
1 bunch kale rinsed and dried, ribs and stems removed, leaves thinly sliced crosswise
2 green onions, sliced
3 eggs
salt and pepper to taste
Directions
Heat large saute pan over medium-high heat. Cook the sausage until browned. Remove from pan and set on paper-towel lined plate to soak up some of the grease. Leave about 1 TB of grease in the pan and add the potatoes. Saute for about 5 minutes, until browned.
Add the peppers, garlic and 1/2 the green onions and cook for 2 minutes until softened.
Add the kale and cook until wilted, about 1 minute. Season with salt and pepper.
Create three small wells in the pan and crack the eggs. Turn the heat down to medium-low and cook until the eggs are cooked through, about 10 minutes.
Garnish with the rest of the green onions and enjoy immediately!
Tips:
Sweet potatoes are also delicious.
This is a great dish to use up any veggies you have left in your fridge so be liberal with the substitutions.
Top it off with a bit of hot sauce for an extra kick.
